Greek Yogurt Beet Salad

20221004 #breakfastdiary 563, 16°C/cloudy Yesterday I sang at a coworker's wedding, and it made me realize that the process matters more, and is more beautiful, than the result. Congratulations on the marriage, truly! (The night before) cut a beet in half and boil it thoroughly for over an hour. Scoop it out gently with a spoon, then top with olive oil, balsamic, plenty of Greek yogurt (made a couple of days ago, standing in for ricotta), and pepper — a process every bit as beautiful. #greekyogurtbeetsalad This is my #myfrenchstylesalad recipe.
