Ingredients

- 1 cup chickpeas - 5-6 leaves Swiss chard - 1/4 onion - Dressing (2T olive oil, 1T white wine vinegar, 1t whole grain mustard) - Olive oil - Salt - Pepper

Steps

1. Rinse the Swiss chard under running water and use only the leaves. 2. Soak the chickpeas in water overnight, then boil in salted water. 3. Heat olive oil in a pan and sauté the chard from step 1 with onion and salt. 4. Plate the chickpeas from step 2, top with the chard and onion from step 3, and drizzle with the dressing. Finish with pepper.
