Notes

20260625, #BreakfastDiary 1759, 21°C/cloudy "The night brings good counsel" (La nuit porte conseil) — the late Hwang Hyun-san rendered this French proverb beautifully as "the night is the teacher." The idea being that no matter how difficult the problem, sleep on it and a good solution will come to you. And it's true — a problem that seemed impossibly tangled and unsolvable can suddenly become clear once you step away, clear your head, and look at it again. But remarkably, a single night doesn't just solve problems — it can make breakfast all on its own. (Na Josik, The Night Makes a Good Breakfast) A night in the fridge, breakfast made by the night itself. About 300kcal per serving, Mango Overnight Oats.

Ingredients

1 cup oats, 2t chia seeds, 2t hemp seeds, 2 cups milk and 1t maple syrup, a little vanilla extract, (topping) 1 mango, 1T Greek yogurt, coconut flakes and (optional) a little roasted mung bean (Thua thong)

Steps

1. In a bowl, combine 1 cup oats, 2t chia seeds, 2t hemp seeds, 2 cups milk with 1t maple syrup, and a little vanilla extract, mix well, and let sit overnight in the fridge. 2. In a small bowl, layer oats, mango, oats again, Greek yogurt, mango again, coconut flakes, and the roasted mung beans (Thua thong) that traditionally accompany mango sticky rice.
