Listened to Kim Chang-wan's "Cheongchun" (Youth), covered by IU, which opens with "someday it'll fade, this vivid youth." It struck me to wonder how much a 20-something IU could really have understood the meaning of "this youth that will someday pass" when she sang it — and then I remembered Kim Chang-wan wrote this song at 27. I suppose age aside, everyone has love that matters to them, a breakup they can't forget, and their own version of youth.
Today I boiled up edamame, precious like the youth of life itself. Finished with a vinaigrette dressing and coconut chips, 530kcal #broccolinigreenbeanedamame salad
Ingredients
3-4 broccolini, 5 green beans, 1 cup edamame, salt, pepper
(dressing) 2T olive oil, 1T white wine vinegar, 1t whole grain mustard

1. Add the broccolini, green beans, and edamame to boiling water with a little salt, blanch for 1-2 minutes, then rinse in cold water and pat dry.
2. Heat a pan with olive oil, add the broccolini and green beans from step 1, season with salt and pepper, and sear quickly over high heat.
3. Plate the broccolini and beans with the edamame, drizzle with the vinaigrette dressing, and top with coconut chips for a fun texture.
