Blend half a beet, 5 cloves of garlic, plenty of herbs, and olive oil in a blender to make the sauce.
Chop dill and mix it into the feta cheese.
Cook the pasta in boiling water until fully done.
Toss the pasta in a bowl with the sauce, mix well, plate it, and top with the feta.
Verdict — what on earth does a finely blended sauce of raw beet and garlic even taste like? Should the beet have been cooked first? Was that too much garlic? How would it even pair with dill-flecked feta? I made this pasta full of doubts like these, and honestly, it tasted just as bewildering as it sounds. Some might say you shouldn't need to actually make and eat it to find out, but I'm the type who has to taste it for myself. Anyway, between this breakfast and a few other things, Christmas Eve 2023 was a real 🔥☠️💬
