#onionsoup from "A Walk Through Ingredients," a column I've loved since issue one of Still Life @stilllife.audio_magazine.
Feeling low on serotonin and worried I'd get cranky, I threw in some acini di pepe for carbs and simmered it all together.
Ingredients
3 onions, 1/4 cup acini di pepe, 1 piece vegetable stock, a little salami, a little chopped chives
Steps
1. Boil the acini di pepe (1/4 cup) in salted boiling water.
2. Peel the onions, trim just the long root ends at the bottom, wash well, and prep. Trim just a little off the top too.
3. Chop a little salami and lightly sauté in a nonstick pot with olive oil. Pour in 900ml water, add a piece of vegetable stock and the onions from step 2, and simmer for 20-30 minutes. (Microwaving the onions for about 2 minutes first could cut the time down.)
4. Once the onions are fully cooked, take them out, add the acini di pepe from step 1, and simmer for 1-2 minutes.
5. Put the onions in a bowl, pour in the broth, and top with the chopped chives.
