Lohikeitto, Finland's traditional salmon soup, known for its creamy flavor. On a cold winter day, a hot bowl of salmon soup paired with coarse rye bread is just right. Today, I left out the cream and kept it light with a clear broth. Serves 1, about 700kcal, Salmon Soup.
Ingredients
1T butter, 1 stalk green onion (white part only), 3 cloves garlic, 1/2 carrot, 1 potato, 150g salmon, 2t seafood dashida, a little parsley
Steps
1. In a pan (I was supposed to use 1T butter, but), heat olive oil and sauté the green onion and garlic, then pour in 600ml water, add the carrot, potato, and 2t seafood dashida, and bring to a boil. Add the butter I forgot about earlier.
2. Add the salmon cut into bite-sized pieces and simmer over low heat. Cook, stirring gently so the salmon doesn't fall apart.
3. Ladle into a bowl and top with chopped parsley, pepper, pepper~
