The poor man's
parmesan
In southern Italy, toasted breadcrumbs are called "Parmigiano dei poveri" - the poor man's parmesan. In southern Italian regions like Sicily, instead of expensive cheese, they'd grind up leftover stale bread, toast it golden, and sprinkle it over pasta. Its nuttiness and crunch would have stood in for cheese's absence. In today's breakfast pasta salad, a leftover piece of bread became the cheese too.
