A clam chowder recipe, but with protein-rich cod fillet standing in for the clams — a high-protein breakfast for my mother, with a clean 1:1:1 balance of carbs, protein, and fat. I've decided to call this recipe Ms. Choi's Cod Chowder.
👆Since this is a breakfast made on a busy morning, the process is compressed — the tip, if you can call it that, is sautéing the onion, then adding flour to fake a roux.
About 280kcal including the rye sourdough — Ms. Choi's Cod Chowder
1. Melt 10g butter in a pot and sauté the minced onion for 2-3 minutes.
2. Add 1T flour to the pot from step 1 and sauté.
3. Add 300ml water and the cubed potato, and bring to a boil.
4. Add 100ml milk and the cod fillet (taken out the night before), cut into bite-sized pieces, and simmer a bit longer.
5. Add 2t salt and 1t pepper. (Adjust the salt to taste.)
6. Ladle into a bowl and serve with a little basil and rye sourdough on the side.
