Ginisang is Filipino (Tagalog) for 'sautéed' or 'a dish stir-fried in oil,' usually placed before the name of the ingredient. Ginisang Sitaw means sautéed string beans, Ginisang Gulay means sautéed vegetables. I used broccoli instead of the string beans called for in the original recipe.
Approx. 400kcal Filipino-Style Broccoli & Tofu Stir-Fry
Ingredients
1/2 block (firm) tofu, 1/2 broccoli, 1/4 red onion, 2 cloves garlic, 2 tomatoes (egg-sized), (sauce) 1T soy sauce, 1T oyster sauce, 1/2 cup water, (other) starch slurry (starch and water 1:1), sesame oil, sesame seeds, a little pepper
Steps
1. Cut the tofu into bite-sized pieces, microwave for 2 minutes to remove moisture, drizzle with oil, and bake at 180°C (air fryer) for 10 minutes.
2. Cut the broccoli into small florets, blanch in salted boiling water for 30 seconds, rinse in cold water, and drain.
3. Heat oil in a pan and sauté minced garlic and sliced onion; once the onion turns translucent, add finely chopped tomato and mash it in as you sauté to build the sauce base.
4. Add the prepped broccoli and sauté for about 2 minutes, then add soy sauce and oyster sauce, pour in 70-80ml water, and bring to a boil once.
5. Add the golden-fried tofu to the pan and simmer gently over low heat for 2-3 minutes, stirring gently. If you want a thicker sauce, add the starch slurry a little at a time to adjust the consistency.
6. Just before turning off the heat, add sesame oil, sesame seeds, and pepper, toss lightly, and plate.
