At long last, oyster season has arrived.
I found a video of #NaiMongHoiTod, a famously Michelin-recognized Thai oyster omelet spot in Bangkok, and after replaying it several times, I recreated a moist Thai-style oyster omelet — #oyster omelet (Or Suan)
Ingredients
1 cup scallions, 1 cup oysters, 1/2T fish sauce, 2 eggs, (starch water) starch and water prepared 1:1 (today's breakfast needs 2 ladles)

1. Blanch the oysters in boiling water and cool them in ice water.
2. Make Thai-style scrambled eggs. Heat oil in a pan, mix 2 eggs with 1 ladle of starch water, pour into the pan and fry crisp, adding more oil here and there.
3. In the pan, add scallions, oysters, and fish sauce in order, then add 1 ladle of starch water and stir-fry.
4. Plate the scrambled eggs and top with the oysters from step 3. (Add blanched bean sprouts on top if you like.) Serve with white pepper or a sriracha + sweet chili dressing.
