20251125 #breakfastdiary day 1569, 7°C/rain, 20 min/exercise (M)
Went through all sorts of ingredients and quite a process, but after eating the finished breakfast, it honestly felt like gochujang and honey could've done the same job — anyway, with its grandiose name, 711kcal Harissa Butternut Squash Salad
Ingredients
1/2 butternut squash, 2T pearl couscous, 2T Greek yogurt, a little minari, (sauce) 10g butter, 2T olive oil, 1t minced garlic, 1t minced ginger, 1t harissa sauce and 1T miso, butternut squash, 2T maple syrup
Steps
1. Peel 1/2 butternut squash and roughly cut into bite-sized pieces.
2. In a pan, mix 10g butter, 2T olive oil, 1t minced garlic, and 1t minced ginger well.
3. Add 1t harissa sauce, 1T miso, the squash, and 2T maple syrup, and cook the squash through while stirring.
4. Put Greek yogurt on a plate and top with the squash and minari.
