Nai Mong Hoi Tod, Oyster Omelet

Ingredients

• 1 cup scallions
• 1 cup oysters
• 1/2T fish sauce
• 2 eggs
• (starch water) starch and water prepared 1:1 (today's breakfast needs 2 ladles) 👉Like this 1. Blanch the oysters in boiling water and cool them in ice water. 2. Make Thai-style scrambled eggs. Heat oil in a pan
• mix 2 eggs with 1 ladle of starch water
• pour into the pan and fry crisp
• adding more oil here and there. 3. In the pan
• add scallions
• oysters
• and fish sauce in order
• then add 1 ladle of starch water and stir-fry. 4. Plate the scrambled eggs and top with the oysters from step 3. (Add blanched bean sprouts on top if you like.) Serve with white pepper or a sriracha + sweet chili dressing. #breakfast #recipe #miraclemorning #oysteromelet
