My eyes have been stinging for a few days now, and yesterday it got bad enough that it felt like there was a splinter lodged in my right eye, so I went to the doctor - turned out to be dry eye, and I got prescribed artificial tears. I thought I'd lived long enough to have seen it all, and yet things I've never experienced before just keep happening. I wonder if there's really anything you can say "that will absolutely never happen to me" about.
Not sure I can say that for certain about this either, but here's an udon you won't find at any udon shop - 580kcal for one serving, Miso Cream Mushroom Udon

Steps
01
Separate the caps and stems of the brown button mushrooms and slice thinly.
02
Finely chop the onion and garlic.
03
Heat 2 tsp olive oil in a pan over high heat and sauté the mushrooms until all the moisture has cooked off.
04
Add butter, and once melted, add the onion and garlic and sauté for a few minutes.
05
Reduce to medium-low heat, add the soy sauce, milk, and heavy cream and mix, then turn off the heat and stir in the miso.
06
Add the cooked udon noodles and toss with the sauce, then add the dark soy sauce.
07
Plate, sprinkle with pepper, and top with the egg yolk and chopped scallion.
