Blue cheese is aged with blue mold introduced during production. Because of the distinctive smell of the mold, it tends to be a real love-it-or-hate-it cheese. I used to wonder how you're supposed to tell freshly unwrapped blue cheese apart from blue cheese that's actually gone bad and grown mold, but human senses are surprisingly good at handling that kind of risk assessment. You just know, by looking at it, this is going to make you sick.
Tomato and zucchini salad with fresh blue cheese
Ingredients
1 tomato, 1/4 zucchini, a little blue cheese and Parmigiano cheese, olive oil, salt
Steps
1. Slice the tomato with a knife and the zucchini with a mandoline, both thin.
2. Layer on a plate in this order: tomato, salt, Parmigiano cheese, zucchini, blue cheese, tomato, salt, Parmigiano cheese, zucchini, salt, blue cheese, olive oil, Parmigiano cheese.
