Tomato Basil Toast

Chopping tomatoes and basil, I find myself thinking about staying even-keeled. 1. Put bread in a hot pan, brush with olive oil, and toast both sides. 2. Chop 3 tomatoes and a good amount of basil, mix in 3T mayonnaise. (It's best to scoop out the tomato seeds first.) 3. Spread a thin layer of mayonnaise on the toast and top with the mixture from step 2. Add a little extra salt to taste if you like.
