Like Professor Jeong Hee-won says, I think of aging as just the result of the trajectory a life has traced. Though the speed of that trajectory isn't always something I welcome.
A roasted grape salad that might (just might) slow the pace of that aging trajectory by boosting antioxidant absorption
1. Rinse the grapes under running water, spread on an oven tray, drizzle with olive oil, salt, and pepper, and roast at 180°C for 15 minutes.
2. Place the burrata cheese in a bowl and top with the roasted grapes, balsamic vinegar, chopped pistachios, and mint.
3. Serve alongside toasted sourdough.
