Greenhouse spring potatoes come in March–May, field-grown spring potatoes in June–July, and highland potatoes from August to November. Fall potatoes hit the market from October through the following January. Field-grown spring potatoes and highland potatoes together make up 70% of the year's total production, so when supply is highest, prices are lowest — and the flavor is at its best too. (Even potato chips have a season? Why chips taste better in June) It's easy to miss, but the bags of Poca Chips sold around this time of year are labeled "100% Korean new potatoes." (The rest of the year, they use regular potatoes instead.) It's a seasonal food you can only really taste around now. 1. Open a bag of Poca Chips made from seasonal new potatoes. 2. Dip them in the tzatziki I made a few days ago.
