I made a pomelo salad using the Pian Kan Pomelo kit from @yoiyoii.recipe, which I happened to come across. (It's a recipe that actually won the top prize at a regional competition.)
Nakhon Pathom has a small, pretty dessert café, so if I ever get the chance I'd like to visit and try Thailand's traditional and fusion desserts. Nakhon Pathom is about an hour from Bangkok and is well known as a region producing high-quality pomelo.
Ingredients
Pomelo, shallots and lemongrass, mint, palm sugar, fried garlic, sweet-and-spicy fish sauce (not sure of the exact recipe, but it seems to have palm sugar, fish sauce, chopped chili, lime juice, etc. — very sweet and very spicy.)
Steps
1. Mix together the boxed pomelo, shallots and lemongrass, mint, palm sugar, fried garlic, and the sweet-and-spicy fish sauce.
2. Line a plate with banana leaf, put the pomelo salad from step 1 into a krathong (a small crispy shell/basket), and garnish with mint and butterfly pea.
