Apparently yeolmu's English name is "young summer radish." What a cute name.
Yeolmu salad tossed in miso tahini dressing and a tomato basil sandwich (a.k.a. Napoleon Bakery's eldest daughter sandwich)
Deciding to steadily work through the 1kg of yeolmu I bought a couple days ago. The yeolmu leaves and stems are on the thick, tough side. Cut the relatively thin, tender leaves into 5cm pieces.
Mix 1 of miso, 2 of tahini dressing, pour in 1/2 cup water to make the dressing, pour it over, crush in a handful of walnuts, and mix thoroughly.
Pit and chop 10 cherry tomatoes. Chop a handful of basil too. Mix with 3 of soy mayo, salt, pepper, and 1 of balsamic thoroughly. Prep complete.
Layer tomato basil on bread, fold in half, then in half again, and plate alongside the yeolmu salad.
