Tomato, red onion, and apple mint, with salt, pepper, and a vinaigrette dressing #tomatomintsalad
A song that came to mind on my morning commute — humming it about 50 times gets me to work.
Wherever my eyes may fall,
let a bright light flow,
and every wind that crosses my heart,
let it carry a warm fragrance.
Wherever my hand may reach,
let warm hands clasp together,
and wherever my feet may walk,
let the troubled waters be stilled.
Beneath the weary sky's low ridge,

Ingredients
- 2 tomatoes
- 1/2 red onion
- mint
- dressing (3T olive oil, 1T white wine vinegar, 1t wholegrain mustard)
- salt
- pepper
Steps
1. Slice the red onion and soak it in water.
2. Wash the tomatoes well, cut into wedges, and arrange on a plate.
3. Add the onion from step 1 and the mint, a little salt and pepper, and finish with the dressing.
